The Crustacean group includes crabs, lobsters, prawns, and shrimps which are all popular inclusions in many diets. Tropomyosin is a protein found in all common species of crustaceans and is responsible for triggering an allergic reaction to sensitive people within the community.
The AgraQuant® Crustacea test kit offers food manufacturers a tool to prevent the release of product contaminated with this allergen.
AgraQuant® Crustacea is a sandwich enzyme-linked immunosorbent assay (ELISA) that determines a quantitative level of Crustacea protein in raw and process foods, rinse waters and environmental swabs. The kit is supplied with standards, antibody coated microwells, extraction buffer, wash buffer, conjugate, substrate and stop solution.
