For in‑vitro quantitative determination of crustaceans residues in food matrices such as bakery, fish, meat, soups, and soy sauce. This test is intended for professional laboratory use in food testing, allergen monitoring, and quality control.

 

The Allergen‑Shield Crustaceans ELISA is a quantitative sandwich enzyme‑linked immunosorbent assay (ELISA) designed for the detection of crustaceans residues in food products labeled as crustaceans‑free. The test ensures accurate quantitative measurement of crustaceans proteins, ensuring compliance with international allergen labeling regulations (EU No. 1169/2011, USA, Canada, Australia, New Zealand).

Principle of the Test

The Allergen‑Shield Crustaceans ELISA is a sandwich enzyme immunoassay. The microtiter wells are pre‑coated with specific antibodies against crustaceans proteins. Standards and samples are added to the wells, and if crustaceans proteins are present, they bind to the immobilized antibodies. After washing, a peroxidase‑conjugated antibody is added to form an antibody‑antigen‑antibody complex. Addition of the chromogenic substrate (TMB) produces a color reaction proportional to the amount of crustaceans protein present. The reaction is stopped with acid, and absorbance is measured at 450 nm. Results are calculated against a standard curve ranging from 0–160 ppm.

• Minimal cross‑reactivity with octopus (8%)

 

 

Storage and Stability

Store kit and reagents at 2–8 °C. Do not freeze. Protect standards and TMB substrate from light. Reseal unused strips with desiccant immediately after use. Expiry dates are printed on labels.
