For in‑vitro quantitative determination of fish residues in food matrices such as Asian food, crackers, meats, sauces, soups, surimi, and wine. This test is intended for professional laboratory use in food testing, allergen monitoring, and quality assurance applications.

 

The Allergen‑Shield Fish ELISA is a quantitative sandwich enzyme‑linked immunosorbent assay (ELISA) designed for the detection of fish residues in food products labeled as fish‑free. The assay identifies trace levels of fish contamination, ensuring compliance with international allergen labeling regulations (EU No. 1169/2011, USA, Canada, Australia, New Zealand).

Principle of the Test

The Allergen‑Shield Fish ELISA is a sandwich enzyme immunoassay utilizing wells coated with specific antibodies against fish proteins. Standards and prepared samples are added to the wells, and if fish proteins are present, they bind to the immobilized antibodies. After washing, a peroxidase‑conjugated secondary antibody is added to form an antibody‑antigen‑antibody complex. The addition of TMB substrate develops a color reaction proportional to the fish protein concentration. The reaction is stopped with acid, and the absorbance is measured at 450 nm. Results are expressed as ppm fish.

• Highly specific for parvalbumin, a major fish allergen resistant to food processing
• No cross‑reactivity up to 100,000 ppm with tree nuts, legumes, seeds, flours, meats, crustaceans, mollusks, or frog legs
• Minimal cross‑reactivity observed with octopus (15%)

 

 

Storage and Stability

Store kit and reagents at 2–8 °C. Do not freeze. Protect standards and TMB substrate from light. Reseal unused strips with desiccant immediately after use. Expiry dates are printed on labels.
