The Allergen‑Shield Mustard ELISA is a quantitative sandwich enzyme‑linked immunosorbent assay (ELISA) designed for the detection of mustard residues in food products labeled as mustard‑free. The assay provides precise quantification of mustard proteins, ensuring compliance with international allergen labeling regulations (EU No. 1169/2011, FDA, FSANZ, and Codex Alimentarius).
General Information
Mustard (Sinapis alba, Brassica juncea, and Brassica nigra) is a common allergen included in mandatory labeling lists within the European Union and other regulatory jurisdictions. Mustard allergens, including Sin a 1 and Bra j 1, are heat‑stable and resistant to food processing, making sensitive detection essential for protecting consumers.
Principle of the Test
The Allergen‑Shield Mustard ELISA is based on a sandwich enzyme immunoassay. Microtiter plate wells are coated with antibodies specific to mustard proteins. Standards and extracted samples are added to the wells, and if mustard proteins are present, they bind to the immobilized antibodies. After washing, a peroxidase‑conjugated antibody is added to form an antibody‑antigen‑antibody complex. The addition of TMB substrate develops a color proportional to the mustard concentration, and absorbance is read at 450 nm.

- The assay exhibits reactivity to yellow (100%), white (50%), brown (75%) and black mustard seed (25%), cabbage seed (41%), rapeseed (12%) and radish seed (0.4%).

Storage and Stability
Store kit and reagents at 2–8 °C. Do not freeze. Protect standards and TMB substrate from light. Reseal unused strips with desiccant immediately after use. Expiry dates are printed on labels.
